This has always been one of my favorite salads. I love any greens salad that has fruit in it and this is a variation to a fall harvest salad that I also love. This delicious salad is a perfect addition to any meal or summer picnic.
While I know this is a stretch for being a dairy recipe, I believe a simple way to support farmers is by eating cheese or simply drinking milk! After all can you have a salad without cheese?!?!
Now the number of servings may vary too depending on the amount of people eating and how you are eating this salad? If you add a protein like chicken you could make this a full meal and that would decrease the amount of servings.
Feta Apple Greens Salad

Serves: 6 servings
Ingredients
Salad:
- 1 bag (5 to 6 oz) of mixed greens - I typically use a spring mix with spinach, lettuce, radicchio and greens
- 1 apple, sliced thinly
- ½ small red onion, sliced thinly
- 1 cup feta cheese
- ½ cup walnuts or pecans
Vinaigrette:
- ⅓ cup olive oil
- ⅓ cup apple cider vinegar
- ⅓ cup sugar
- pinch of pepper
Instructions
- Assemble the salad by adding the greens, apple, red onion and feta cheese in a large serving bowl.
- Place the vinaigrette ingredients in a pint mason jar and shake. (You will not need all of the dressing so you can store in fridge and use again soon.)
- Toss salad with as much vinaigrette as you need just before serving. Do not use all of the vinaigrette as it is a larger batch then you may need. Top with walnuts or pecans and serve.
