1 bag (5 to 6 oz) of mixed greens - I typically use a spring mix with spinach, lettuce, radicchio and greens
1 apple, sliced thinly
½ small red onion, sliced thinly
1 cup feta cheese
½ cup walnuts or pecans
Vinaigrette:
⅓ cup olive oil
⅓ cup apple cider vinegar
⅓ cup sugar
pinch of pepper
Instructions
Assemble the salad by adding the greens, apple, red onion and feta cheese in a large serving bowl.
Place the vinaigrette ingredients in a pint mason jar and shake. (You will not need all of the dressing so you can store in fridge and use again soon.)
Toss salad with as much vinaigrette as you need just before serving. Do not use all of the vinaigrette as it is a larger batch then you may need. Top with walnuts or pecans and serve.
