Oh how I love pickles. Now this isn’t just a pregnancy thing, I really do like pickles. These refrigerator pickles are easy to make and delicious to have in the fridge! I especially love that I can add more pickling cucumbers when my jar is getting low to make more. I usually replenish and refresh my liquid after the second refill of cucumbers to get that fresh and flavorful taste still.

Ingredients
- 4-6 small pickling cucumbers
- 1 small onion
- 1¼ cup sugar
- 1¼ cup vinegar
- 1 tsp. mustard seed
- 1 tsp. salt
- 1 tsp. tumeric
- 1 tsp. celery seed
Instructions
- Slice the pickling cucumber into thin rounds and slice the onions into thin slices.
- Mix together the ingredients for the syrup - sugar, vinegar, mustard seed, salt, tumeric and celery seed. Do not heat, syrup is to be cold.
- Fill a quart jar with sliced cucumbers and onions and pour liquid into jar. (You may have a little too much liquid but I like to have extra rather then to have to mix up more!)
- Store in refrigerator at all times and you can add more pickling cucumbers and onions as you eat the pickles. They are usually ready to eat within just a few days.
