For the kids I love to make bite size muffins because they sometimes make less of a mess but they are the perfect size for little hands. These Mini Chocolate Chip Banana Muffins are a recipe I’ve made several times. Our son likes any food and our daughter likes them because I add chocolate.
I make these in a mini muffin pan but you could certainly use a regular muffin pan but you would need to cook the larger muffins for 18-20 minutes. ENJOY these with a glass of cold milk!
Mini Chocolate Chip Banana Muffins

Serves: 48 mini muffins
Ingredients
- ¾ cup packed brown sugar
- ½ cup butter, softened (1 stick)
- 3 medium (1½ cups) ripe bananas, mashed
- 2 large eggs
- 1 teaspoon vanilla
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ½ cup mini semi-sweet chocolate chips, can use regular chocolate chips
Instructions
- Heat oven to 350 degrees F. Grease a mini muffin pan; set aside.
- Mix the brown sugar and butter with a mixer on medium speed until the mixture is creamy. Add bananas, eggs and vanilla and combine until well mixed.
- Combine flour, baking soda and salt in another bowl and stir flour gently into banana mixture until just blended. Gently stir in chocolate chips.
- Spoon batter into prepared mini muffin pan (I use my small cookie scoop). Bake 8 to 10 minutes or until light golden brown. Remove from pans while still warm and ENJOY!
I swear Nora likes them, she was just being THREE in the photos. In our house the age three means difficult. 😉
