We wanted a fun Father’s Day dessert and I know how much Clayton likes ice cream cake, so I created our own ice cream cake with ice cream and real cake. This was definitely a hit and I’ll be making it again soon!
You can use whichever kind of cake mix you want, but I thought the Funfetti would be well FUN and I went ahead and used the Funfetti icing too. This cake is a great summer treat and kids will definitely approve!
Ice Cream Funfetti Cake

Ingredients
- 1 box of Funfetti cake mix and ingredients needed to make cake (it doesn't have to Funfetti cake, we just liked this one for this recipe)
- ½ of a 1½ qts container of vanilla ice cream
- 1 tub of Cool Whip
- 1 tub of Funfetti icing or your favorite vanilla icing
- Sprinkles
Instructions
- Preheat oven and make your Funfetti cake using the directions on the box. Bake your cake in two 8 or 9 inch round cake pans.
- Allow cake to cool completely. While cake cools, remove your ice cream from the freezer to allow it to soften.
- Place one layer of the cake on a plate or platter and spread the softened ice cream on top, use about ¾ of a qt of ice cream. If you want your ice cream layer thicker, use more ice cream. Top the ice cream layer with your second layer of cake.
- Place cake into freezer to allow the cake and ice cream to harden. I froze my cake for 3 hours. *Do allow extra time for your ice cream to refreeze depending on your freezer.*
- Once cake is frozen and ready to be iced prepare the icing. In a mixing bowl beat your Funfetti icing to make it soft and fluffy and gently fold in your Cool Whip.
- Gently ice your cake with your icing (I had extra icing leftover that I didn't use and may have ate it with a spoon). Decorate your cake with sprinkles or more icing details.
- Place the cake back in the freezer for 1 hour and serve. *Do allow extra time for your ice cream to refreeze depending on your freezer.*
