My family has several Chinese and Polynesian foods that are among our top favorites! Fried Rice is one we have made for years! It can be a meal in itself if you add chicken, shrimp or even beef to it! But we love to serve it as a side dish with Chicken Basil Stir Fry, Beef and Broccoli Stir Fry or Sweet and Sour Pork or Chicken, and don’t forget the Egg Roll!

Ingredients
- 3 cups rice, prepared
- 1 Tablespoon sesame oil
- 2 Tablespoons vegetable oil
- 1 medium onion, chopped
- ½ cup peas, frozen
- ½ cup carrots, chopped (can use frozen)
- 2 cloves garlic, minced
- 2 eggs
- ¼ cup soy sauce
- ½ pound cooked chicken, shrimp or beef (optional)
Instructions
- Prepare rice according to package instructions to yield 3 cups cooked rice.
- Heat sesame oil and vegetable oil in a large skillet on medium heat.
- Add onion, peas, and carrots to oil and saute until soft and tender about 3 minutes. Add minced garlic and saute for 1 minute until garlic is fragrant.
- Add cracked eggs into pan and scramble, mixing throughout vegetables.
- Add cooked rice and soy sauce to pan, stir and cook for 5 minutes. Add chicken, shrimp or even beef when you add rice if you want to add meat to the dish.
- Enjoy alone or with a stir fry on top!
