Ingredients
  • 3 cups rice, prepared
  • 1 Tablespoon sesame oil
  • 2 Tablespoons vegetable oil
  • 1 medium onion, chopped
  • ½ cup peas, frozen
  • ½ cup carrots, chopped (can use frozen)
  • 2 cloves garlic, minced
  • 2 eggs
  • ¼ cup soy sauce
  • ½ pound cooked chicken, shrimp or beef (optional)
Instructions
  1. Prepare rice according to package instructions to yield 3 cups cooked rice.
  2. Heat sesame oil and vegetable oil in a large skillet on medium heat.
  3. Add onion, peas, and carrots to oil and saute until soft and tender about 3 minutes. Add minced garlic and saute for 1 minute until garlic is fragrant.
  4. Add cracked eggs into pan and scramble, mixing throughout vegetables.
  5. Add cooked rice and soy sauce to pan, stir and cook for 5 minutes. Add chicken, shrimp or even beef when you add rice if you want to add meat to the dish.
  6. Enjoy alone or with a stir fry on top!
