Prepare rice according to package instructions to yield 3 cups cooked rice.
Heat sesame oil and vegetable oil in a large skillet on medium heat.
Add onion, peas, and carrots to oil and saute until soft and tender about 3 minutes. Add minced garlic and saute for 1 minute until garlic is fragrant.
Add cracked eggs into pan and scramble, mixing throughout vegetables.
Add cooked rice and soy sauce to pan, stir and cook for 5 minutes. Add chicken, shrimp or even beef when you add rice if you want to add meat to the dish.
Enjoy alone or with a stir fry on top!
