In a small saucepan, stir balsamic vinegar and honey together and place over medium heat. Bring to a boil, reduce heat to low, and simmer until the vinegar mixture has reduced nearly in half, about 10 minutes. Set the balsamic reduction aside to cool.
In a serving bowl place the cherry tomatoes and mozzarella cheese. Sprinkle with the fresh basil, salt and pepper. Toss to combine.
Drizzle with olive oil and the balsamic reduction over the top and serve
