Cheesy Chicken Broccoli Rice Skillet

Ingredients
  • 1 tablespoons vegetable or canola oil
  • ½ cup chopped onion
  • 1 large carrots, peeled and diced (about ½ cup)
  • 1 large boneless skinless chicken breast, cut into 1-inch pieces and lightly sprinkled with salt and pepper
  • 1 clove garlic, minced
  • 1 cup uncooked white rice
  • 2¼ cups chicken broth
  • 2 cups chopped broccoli
  • 2 cups shredded cheddar cheese
Instructions
  1. In a deep 12-inch skillet, heat 1 tablespoon oil.
  2. Once hot, add the onion and carrots. Cook for 5 minutes or until they start to soften.
  3. Push onions and carrots to the side of the pan and add seasoned chicken. Cook for 5 minutes until browned and flip chicken and cook second side for another 5 minutes, until brown. Add the garlic and cook for 30 seconds.
  4. Push the chicken to the side and add in rice. Stir until coated with oil and cook for 1 minute.
  5. Add in the chicken broth and bring to a boil.
  6. Once boiling, cover the pan and cook for 10 minutes.
  7. Add in the broccoli and stir. Cover again and cook for another 5 minutes or until the rice is fully cooked and broccoli is tender.
  8. Finally, stir in the cheese until melted.
