Mini Chocolate Chip Banana Muffins

Ingredients
  • ¾ cup packed brown sugar
  • ½ cup butter, softened (1 stick)
  • 3 medium (1½ cups) ripe bananas, mashed
  • 2 large eggs
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup mini semi-sweet chocolate chips, can use regular chocolate chips
Instructions
  1. Heat oven to 350 degrees F. Grease a mini muffin pan; set aside.
  2. Mix the brown sugar and butter with a mixer on medium speed until the mixture is creamy. Add bananas, eggs and vanilla and combine until well mixed.
  3. Combine flour, baking soda and salt in another bowl and stir flour gently into banana mixture until just blended. Gently stir in chocolate chips.
  4. Spoon batter into prepared mini muffin pan (I use my small cookie scoop). Bake 8 to 10 minutes or until light golden brown. Remove from pans while still warm and ENJOY!
