In large skillet over medium-high heat brown the ground beef for about 5-6 minutes.
Add the onion and green pepper to the ground beef and cook until soft and tender. Drain off excess fat.
Then stir in the steak sauce and beef stock, season with salt and pepper, bring to a boil and cook about 3-4 minutes or until some of the sauce cooks down.
Slice the rolls, toast the rolls and set aside.
If making the cheese sauce, melt the butter in a small pot over medium heat. Stir in the flour and cook about 1 minute. Whisk in milk, bring up to a bubble and let thicken, about 2 minutes. Turn off heat and stir in the cheese. Stir until smooth.
To serve, place a scoopful of the meat mixture onto the bottom of the rolls, then top with the cheese sauce and place the top of the roll. If using just a slice of provolone cheese, add cheese slice and place in warm oven to melt. Sometimes we add mayo, lettuce or tomato to the sandwich as well.
