I have never been a huge meatloaf fan but add some cheese and I am sold! 😉
I first made these nearly 5 years ago and it’s a recipe I always come back to. We love the individual servings of these Cheesy Mini Meatloaf and they are perfect for feeding a crowd or kids as it’s easy to serve. I love to serve these with mashed potatoes or a fresh vegetable like asparagus or green beans.
Cheesy Mini Meatloaf

1 Tablespoon butter
1/2 cup diced onion
2 garlic cloves, minced
1 ½ pounds ground beef
1/2 cup breadcrumbs
1/4 cup ketchup
2 Tablespoons grated Parmesan cheese
1 Tablespoon Dijon mustard
1 Tablespoon fresh oregano (1 teaspoon dried oregano)
1 Tablespoon fresh parsley (1 teaspoon dried parsley)
1 teaspoon salt
1 teaspoon freshly ground black pepper
4 ounces sharp white cheddar cheese, diced in small cubes
1 large egg, lightly beaten
- Sauce
1/4 cup ketchup
1/4 cup brown sugar
1 Tablespoon Worcestershire
Directions
- Preheat oven to 425 degrees F. Lightly spray broiler pan with cooking spray.
- In a large skillet over medium-high heat, melt butter. Add onion and garlic and sauté until translucent. Set aside.
- In a large mixing bowl, combine onion mixture, ground beef, breadcrumbs, ketchup, Parmesan cheese, mustard, seasonings, cheese and egg. Be careful not to over-mix by using your hands or spoon to mix. Shape into 6 (4 x 2-inch) loaves and place on broiler pan.
- In a small bowl, mix together the sauce which tops the meatloafs. Mix together the ketchup, brown sugar and Worcestershire and spread evenly over each mini meatloaf.
- Bake for 25 minutes. Enjoy!
