In case you haven’t noticed in this season of life, quick, easy meals that can be prepared with two kids hanging on you is a MUST! One skillet meals are the best thing ever too for saving time and the saved clean up too!
This Cheesy Chicken Broccoli Rice Skillet adds veggies to the kids diet in an almost-hidden way. They love this rice and Nora typically asks for her with the “green trees” but she’ll eat the carrots so I call that a win!
You can certainly sub in your favorite veggies or use the ones I suggest here. Enjoy!
Cheesy Chicken Broccoli Rice Skillet

Ingredients
- 1 tablespoons vegetable or canola oil
- ½ cup chopped onion
- 1 large carrots, peeled and diced (about ½ cup)
- 1 large boneless skinless chicken breast, cut into 1-inch pieces and lightly sprinkled with salt and pepper
- 1 clove garlic, minced
- 1 cup uncooked white rice
- 2¼ cups chicken broth
- 2 cups chopped broccoli
- 2 cups shredded cheddar cheese
Instructions
- In a deep 12-inch skillet, heat 1 tablespoon oil.
- Once hot, add the onion and carrots. Cook for 5 minutes or until they start to soften.
- Push onions and carrots to the side of the pan and add seasoned chicken. Cook for 5 minutes until browned and flip chicken and cook second side for another 5 minutes, until brown. Add the garlic and cook for 30 seconds.
- Push the chicken to the side and add in rice. Stir until coated with oil and cook for 1 minute.
- Add in the chicken broth and bring to a boil.
- Once boiling, cover the pan and cook for 10 minutes.
- Add in the broccoli and stir. Cover again and cook for another 5 minutes or until the rice is fully cooked and broccoli is tender.
- Finally, stir in the cheese until melted.
