This baked chicken recipe is one that we love and that I make often in our house. I am not sure where the recipe came from but it’s a keeper. The chicken is always tender and juicy and the cheese on top just adds to the flavor. The recipe looks complex as the chicken is marinated, breaded and browned before being baked in the oven with chicken broth and topped with cheese. However, it really is easy and something I can pull off with little time for lunch with the farm crew.
Cheesy Baked Chicken

4 chicken breasts
2 eggs, beaten
1 Tablespoon olive oil
1 cup seasoned breadcrumbs
1 teaspoon salt
1/2 teaspoon pepper
1 cup chicken broth
4 slices of Monterey Jack cheese or Cheddar cheese
Directions
- Preheat oven to 350 degrees F and prepare a 9-inch by 13-inch baking dish.
- Marinate the chicken in the beaten egg for one hour. (You can just dip the chicken in the egg if you are short on time, I do this often and have not noticed much difference).
- Preheat a skillet with olive oil.
- Place the seasoned breadcrumbs on a plate or bowl and mix in salt and pepper.
- Remove the chicken from the egg and roll chicken in the seasoned breadcrumbs.
- Brown the chicken in the hot skillet and flip over to brown chicken on all of the sides. Once browned, arrange in a single layer in the baking pan.
- Add the chicken broth to the pan and top each chicken breast with a slice of cheese.
- Bake uncovered for 1 hour or until a meat thermometer says the meat has reached temperature (165).
