Need a quick dessert with big impact but have little time? This Cheesecake Brownie is always a favorite. You can make your own brownie or simply use a box and spice it up with a cheesecake topping. This is something that my mom would always make but I don’t always think to make it. I will be remembering this recipe more!
I have to give credit to my friend Lyndsay for this beautiful Cheesecake Brownie that is pictured above. She brought it to a picnic this weekend and I knew I had to feature it. We made brownie sundaes with it too by adding ice cream, chocolate and caramel sauce on top.
One of my favorite homemade brownie recipes is included in this recipe if you would rather not use a box mix.
- 1 (19.8 oz) pkg brownie mix and needed ingredients for mix
- 1 (8 oz) pkg cream cheese
- 1 egg
- ⅓ cup sugar
- Prepare the brownie mix as directed by box. Preheat oven to temperature indicated on box. Grease a 9x13 inch pan.
- Spread the brownie batter evenly into the prepared pan.
- With an electric mixer, beat together the cream cheese, egg and sugar until smooth. Drop the cream cheese mixture on top of the brownie batter using a spoon. Swirl together using a knife.
- Bake according to the brownie instructions. Brownies will be done when a toothpick inserted comes out clean. Cool in the pan, then cut into bars and serve.
