BBQ Meatballs

BBQ Meatballs are one of Clayton’s favorite meals! Ok, Clayton has a lot of favorite meals but he claims this makes the top 10. I can’t blame him, these are so good and our kids love them too! If I need a quick idea for a meal, I often fall back on these.

These are delicious served with mashed potatoes and your favorite vegetables. They are also great to make extra and freeze! I always make a double batch so I have a pan in the freezer too. I also love these meatballs because I can make the meatballs up the night before or early in the morning and have them waiting in the fridge to throw in the oven. They make busy days a breeze!

Ingredients

• Meatballs:

• 1 1/2 lbs ground beef

• 1/2 cup milk

• 2 eggs

• 1/2 cup quick oats

• 1/2 small onion, minced

• salt and pepper

• BBQ Sauce:

• 1 cup ketchup

• ½ cup brown sugar

• 4 Tablespoon vinegar

• 4 Tablespoon Worcestershire Sauce

Directions

• Preheat oven to 350°F degrees and grease a 13×9 baking dish with cooking spray.
• In a large bowl, mix the meatball ingredients (ground beef, milk, eggs, quick oats and minced onion), all together until well mixed.
• Shape into 1 inch balls (I use a small cookie scoop and then roll them). Place in a greased 13×9 baking dish.
• Mix the sauce ingredients (ketchup, brown sugar, vinegar and Worcestershire sauce) together in a bowl and pour evenly over the meatballs.
• Bake meatballs for 1 hour.

Notes

• Make extra and freeze. I always make a double batch so I have a pan in the freezer too.
