This Baked Brie with Herbs would be a perfect appetizer for a girls night or any type of party or gathering. The baguette bread and tomatoes toasted with the cheese are ideal for easy dipping and topping. This recipe was rich with flavor and zest from the fresh herbs, olive oil, salt and pepper. The tomatoes add a richness as the cherry tomatoes were sweet and delicious with the cheese and baguette bread too!
Now I know not everyone loves Brie and I am sorry. You don’t know what you are missing out on!
My husband and I may or may not have sat on the couch and devoured this last night. I will say recipe tasting is certainly not something that I dislike during the month of June! 😉
This delicious cheesy spread will be served at a party soon and not just for my dinner.
- Brie Cheese, cut off the top of the rind
- ½ cup cherry tomatoes
- 1 Baguette loaf, sliced into ½ inch slices
- Olive oil (about 1 Tablespoon)
- Fresh herbs (rosemary, thyme and basil is what I used), chopped
- Sea salt
- Fresh ground pepper
- Preheat oven to 350 degrees F.
- On a large baking sheet lay out your baguette bread, tomatoes, and your rind of Brie cheese with the top removed.
- Drizzle all of the ingredients with olive oil (I used about 1 Tablespoon) and top with fresh herbs, salt and pepper.
- Bake the sheet of goodness for 10 to 12 minutes until the Brie melts and the baguettes started to look toasted.
- Serve at a party or just because and enjoy that cheesy goodness.
