I never knew my Grandma Norman but I know her off her recipe for her Chocolate Chip Cookie Bars! These are a Norman family favorite recipe that we all love and adore and it is a mighty delicious and soft Chocolate Chip Cookie Bar!
Grandma Norman was a farm wife, teacher, mother of 9 and a good cook from what I hear. While I may not have memories of my Grandmother I do have recipes and that helps me feel like I sharing those memories.
I have been meaning to share this recipe because every time I want to make these cookie bars I text my Mom for the recipe because I have lost it every single time. Now I have it saved for good keeping for myself mostly.
However, today, August 4th is National Chocolate Chip Cookie day so it’s fitting I share it today too!
Grandma always made these with shortening but over time I have just exchanged it for butter, because well we are dairy farmers. Another change I sometimes make it the baking dish. While this is normally baked in a 9×13-inch baking pan, I do sometimes use a 12×17-inch jelly roll pan for a thinner cookie. May seem silly but for a gathering there is more to share when it is thinner, just watch your bake time if using a different pan.

Grandma’s Chocolate Chip Cookie Bars

Ingredients
- 1/2 cup softened butter
- 1 cup sugar
- 2 eggs
- 1/4 cup cold coffee
- 2 1/2 cup flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1 cup chocolate chips
Directions
- Preheat oven to 375 and grease a 9×13-inch baking pan.
- In a large mixing bowl, beat together the butter and sugar with an electric mixer. Add in eggs and beat together.
- Add it the cold coffee, flour, baking powder and baking soda and beat until combined. Gently mix in the chocolate chips.
- Spread the cookie dough into the greased 9×13-inch baking pan.
- In a small bowl, mix together the brown sugar and cinnamon and sprinkle on top of the cookie dough.
- Bake at 375 for 16-18 minutes. Cool and cut into squares and enjoy with a glass of cold milk!
