Refrigerator Pickles
Refrigerator Pickles
Author:
Prep time:
Total time:

Ingredients
  • 4-6 small pickling cucumbers
  • 1 small onion
  • 1¼ cup sugar
  • 1¼ cup vinegar
  • 1 tsp. mustard seed
  • 1 tsp. salt
  • 1 tsp. tumeric
  • 1 tsp. celery seed
Instructions
  1. Slice the pickling cucumber into thin rounds and slice the onions into thin slices.
  2. Mix together the ingredients for the syrup - sugar, vinegar, mustard seed, salt, tumeric and celery seed. Do not heat, syrup is to be cold.
  3. Fill a quart jar with sliced cucumbers and onions and pour liquid into jar. (You may have a little too much liquid but I like to have extra rather then to have to mix up more!)
  4. Store in refrigerator at all times and you can add more pickling cucumbers and onions as you eat the pickles. They are usually ready to eat within just a few days.
